Recipe For Potato Leek Soup Without Cream
Heat up the oil add the butter and allow it to melt.
Recipe for potato leek soup without cream. Put in the potato bay leaves broth thyme salt and pepper and bring this all to a boil. Stir puree into remaining soup. Saute leeks and onion in olive oil for 10 min on med low heat until soft and fragrant.
In a blender puree 1 cup of the soup. Puree soup in batches until smooth. Don t cook them more.
In a large stock pot sauté the onion celery leeks and garlic until soft and fragrant. Puree the soup with a blender or immersion blender. This is a healthy soup made with low sodium chicken broth and without using heavy cream or crem fraiche.
Cover and simmer for 20 30 min until potatoes are very soft and fall apart when forked. Now add the garlic and leeks together and cook it for about 10 minutes stirring constantly. Wash the leek and chop it as well.
Peel wash and chop the potatoes and carrots. Make sure they don t turn brown. Bring to a boil then turn heat down to low and simmer for about 20 minutes or until potatoes are tender.
Simmer until fork tender about 10 mins. Add potatoes cauliflower and chicken broth. Add the water the broth and the potatoes.
