Acorn Squash Recipe Goat Cheese
Drizzle with olive oil and season with salt pepper and rosemary.
Acorn squash recipe goat cheese. To serve add goat cheese to squash. Top with remaining goat cheese and walnuts. Top each with a tablespoon of goat cheese.
Top with dried cranberries crumbled goat cheese and balsamic glaze. Saute 2 to 4 minutes longer and adjust the seasoning with salt and pepper. Lightly grease a large baking dish with olive oil.
Bake for about 15 minutes or until filling is heated through. Roast for 35 to 40 minutes in preheated oven until squash has softened. Remove from heat stir in cilantro and lime juice in.
Cover each with foil. Add in cumin black beans and corn. Switch position of pans midway through roasting to ensure even doneness.
When squash comes out of oven let it cool for a few minutes. Line a baking sheet with parchment or foil. Preheat the broiler to low.
Add salt and pepper to taste. Bake for about 10 minutes or until top is golden brown. Place squash cut side down on a parchment lined baking sheet.
