Recipe For Asparagus Soup
Stir through the spinach pour over the stock bring to the boil then blitz with a hand blender.
Recipe for asparagus soup. Place asparagus and onion in a saucepan with 1 2 cup of stock. Heat the olive oil in a saucepan over a medium heat. Gently fry the onions celery and leeks for around 10 minutes or until soft and sweet without colouring.
Reserve a few asparagus tips for garnish. Place asparagus and onion in a saucepan with 1 2 cup vegetable broth. I fried bacon and removed it from the pot then added asparagus garlic leek and onions and sauteed for about five minutes before adding the stock to simmer.
Step 3 season generously and add hot water to loosen if needed. Blend remaining vegetable mixture until smooth. I also added 1 2 cup white wine to the stock.
Add the shallots asparagus stalks and garlic and cook for 5 10 mins until softened but still bright. Bring to a boil reduce heat and let simmer until the vegetables are tender. Bring to a boil.
Roughly chop the asparagus stalks. Cover and simmer for about 30 minutes until the vegetables are very tender. Add the onion and fry for four minutes until softened.
Purée the soup with a hand held immersion blender until smooth and creamy. Add the asparagus and cook for another two minutes. Bring the broth to a boil reduce heat and let simmer until the vegetables are tender.
