Recipe Eggplant Stir Fry
Place a pot lid on top to keep the eggplant under water for 15 minutes.
Recipe eggplant stir fry. 1 fry the garlic and chili in a little oil for about 30 seconds then add the cut eggplant and coat in the oil. Continue cooking until the mushrooms brown 2 to 3 minutes. 2 add the sugar soy sauce oyster sauce and onion.
Leave a little bit of oil in the pan throw in the pork ginger and garlic stir fry for about 2 minutes until fragrant. In a small bowl whisk together the hoisin sauce soy sauce sesame oil and rice vinegar. How we make our spicy stir fried eggplant.
Fish out the eggplants from the pan and set aside. In a small bowl dissolve the cornstarch with the water and sesame oil. Add the onion garlic and ginger and stir fry until fragrant.
Rinse and dry the eggplant and cut off stems. Repeat with 2 tablespoons oil and the remaining eggplant. Heat a pan with 1 tablespoon of cooking oil over medium high heat.
Cover the eggplant to keep warm and set aside. Add 1 teaspoon salt mix well. Next add a teaspoon of vinegar and a teaspoon of salt to the eggplant and toss it with your clean hand.
Mix the seasonings in a bowl until the sugar is dissolved and set aside. Add half of the eggplant and cook stirring occasionally until tender and browned in parts 4 to 5 minutes. Quarter them lengthwise and cut each quarter into 2 inch wedges.
