Eggplant Parmesan Sauce Recipe
Drizzle 1 cup sauce over and sprinkle with one third of cheese mixture.

Top with a layer of eggplant slices trim as needed. Bake uncovered at 400 f until the sauce bubbles and the top is slightly browned 15 to 20 minutes. Fry in 1 4 inch olive oil over medium high heat.
Bake in preheated oven for 35 minutes or until golden brown. Place a layer of eggplant slices in the sauce. Spoon tomato sauce over eggplant and top with mozzarella cheese and 3 4 cup parmesan cheese.
