Recipe Eggplant Ground Beef
Fill the center of each eggplant with the meat mixture.
Recipe eggplant ground beef. Stir to coat with the ground beef onion mixture. Place a layer of eggplant slices on the bottom of the ovenproof dish. Drain off excess fat.
Do the same with the peppers. Brown the ground beef in 2 tablespoons of the oil stirring occasionally. Preheat the oven to 300 f 149 c.
Pre heat oven to 400 f. Arrange half of the drained eggplant slices in a 13x9x2 inch baking dish. Divide the eggplant slices into 3 equal parts.
Cook and stir ground beef onion and garlic in hot oil until the beef is completely browned and no large chunks remain 7 to 10 minutes. Add in the eggplant. Heat a large skillet over medium high heat.
Add in the chopped tomatoes the tomato paste water the chili the dried bay leaf 1 4 t ground cinnamon 2 t salt and pepper. Cook and stir ground beef in the hot skillet until browned and crumbly 5 to 7 minutes. Add drained tomatoes breaking up with a spoon.
Using your paring knife cut a slit from end to end of each eggplant and gently open up each one with your fingers. Once the meat has browned i add the eggplant and tomato and then sprinkle on some liquid aminos. Heat vegetable oil in a large skillet.
