Deviled Eggs Guacamole Recipe
In a bowl mash the avocado and 2 whole egg yolks.
Deviled eggs guacamole recipe. Mix in lime juice red onion jalapeño cilantro salt and pepper and adjust to taste. For a smoother consistency use an electric hand mixer to whip the mixture until smooth. Add the avocado lime juice garlic and salt to the egg yolks and mash everything together.
Place the eggs in a large pot and cover with 1 inch 2cm of cold water. Slice the hard boiled eggs in half and remove the yolks to a bowl. Transfer the eggs to a bowl of ice water for about 3 minutes then peel them and cut them in half.
Slice eggs in half and remove yolks to a mixing bowl. Remove shells and cut the egg in half vertically. In the bowl with the yolks combine the avocado cilantro green onion and jalapeno.
Place the eggs in a pot and fill with cold water until the eggs are just covered. Gently fold in tomato. Fill a saucepan with 1 inch of water and insert a steamer basket.
Bring water to a boil and immediately remove from heat. Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Bring to a boil then reduce heat to low and cook covered 1 minute.
Bring to a rolling boil and remove from heat. Cut boiled eggs in half lengthwise and remove yolks. Stir in the tomato jalapeño pepper and cilantro.
