Stir in chili powder cumin coriander cayenne pepper and oregano and cook and stir for 1 minute.

Place one tortilla in sauce make sure its completely covered with the sauce wait about 30 seconds or until the tortilla is limp. Add the beef to the skillet and cook until completely browned. Spray a 9x13 or two 7x11 baking dishes with pam.
Place rolled filled tortilla seam side down in a greased 13x9 inch baking dish. Saute with the ground beef and onion until cooked through. Add the beans to the beef mixture.
Bring to a low boil and simmer covered for 30 minutes. Stir in 4 teaspoons of garlic and cook and stir until fragrant another 3 to 5 minutes watching carefully to avoid burning the garlic. Stir in the can of beans cup fresh salsa and one can of the red enchilada sauce.
Remove second batch of beef and place with the previously browned beef. Drain excess fat from skillet. To make the spicy red sauce heat the olive oil in a large saucepan over medium heat and cook and stir 1 2 cup of onion until the onion is softened 3 to 4 minutes.
Add the green chilis tomato sauce tomato paste water chili powder cayenne cumin pepper and salt. Pour off all but one tablespoon of oil form dutch oven and add onion plus 1 2 teaspoon salt. Reduce the heat to low and cook for 25 minutes or until the beef is fork tender.
