Recipe For Old Fashioned Buckeyes
This old fashioned buckeye candy recipe makes about 5 dozen candies.
Recipe for old fashioned buckeyes. The dough will look dry. Using an electric mixer beat together peanut butter butter vanilla and salt until light and fluffy. If chocolate thickens as you are dipping the buckeyes microwave in 10 second intervals until it achieves the desired consistency when stirred.
Shape into 1 balls. Holding onto the toothpick dip each chilled peanut butter ball into the melted chocolate leaving a small round area near the toothpick. In a large bowl mix together the peanut butter butter vanilla and confectioners sugar.
Chill again until the buckeyes are firm and the chocolate is set at least 30 minutes. The dipping of each ball should be done quickly so the warm chocolate does not thaw the peanut butter too much. Melt chocolate and paraffin in a double boiler.
Mix peanut butter margarine or butter powdered sugar and vanilla in bowl it helps to soften the margarine. Form mixture into 1 inch balls place on a waxed paper lined rimmed baking sheet and chill for 1 hour. Serve chilled straight from the refrigerator or at room temperature.
Lift out let excess chocolate drain off and transfer to wax or parchment paper to set. This will be the eye of the buckeye. Dip frozen peanut butter balls in chocolate while holding onto the toothpick.
Shape into balls using approximately 2 teaspoons in each ball. Let the excess chocolate drip off then return the buckeye to the baking sheet. Leave a small portion of peanut butter showing at the top to make them look like buckeye nuts.
