In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Flipthe eggplant slices then continue baking for 15 more minutes. Addmarinara sauce on top sprinkle with mozzarella and bake for 3 5 more minutes until the cheese is melted.
Cover the bottom of a 9x13 inch casserole dish with a layer of spaghetti sauce. Deep fry eggplant until golden 2 to 3 minutes per side. Place remaining eggplant slices on top and cover with remaining marinara basil and parmesan cheese.
Repeat with remaining eggplant sauce and mozzarella. Melt butter in a bowl. Bake in the preheated oven until lightly browned and crisp about 5 minutes per side.
Sprinkle basil on top. Sprinkle with mozzarella and parmesan cheeses. Heat oil in a deep skillet over medium high heat.
Repeat with remaining ingredients ending with the cheeses. Place on aluminum foil or parchment paper lined baking sheet. Dredge eggplant slices in flour on both sides and add to the hot oil working in batches.
