Recipe for buckeyes cookies. You ll need wax paper a double boiler a cookie pan and a medium bowl. Lift it into the melted chocolate and cover the peanut butter ball leaving a circle of peanut butter visible on the top. Refrigerate for 15 minutes or until firm.
Shape into balls and place on a pan covered with wax paper. In a microwave safe bowl melt the chocolate and vegetable shortening stirring every 20 seconds until melted. Line a cookie sheet with parchment paper.
Without crisco chocolate will remain soft in double boiler. Preheat oven to 350 and line two large baking sheets with parchment paper. Chill the mixture in the refrigerator for 30 minutes.
Microwave chocolate chips and shortening on high until melted. Cool on wax paper and store in refrigerator or freezer. Dip the ball into the melted chocolate leaving a circle of peanut butter visible on top.
Meanwhile melt chocolate with a bit of crisco so the chocolate will harden. In a medium bowl combine peanut butter and powdered sugar and mix until smooth. Leave a small portion of peanut butter showing at the top to make them look like buckeyes.
Stick a toothpick in the center of the peanut butter ball. Dip frozen peanut butter balls in chocolate holding onto the toothpick. Let the excess chocolate drip off then return the buckeye to the baking sheet.
