Recipe Eggplant With Miso
Turn the eggplant over and cover with a lid.
Recipe eggplant with miso. Bring to a gentle boil stirring constantly. Pour the paste over the eggplant and stir to coat. Place under the broiler about 2 inches from the heat and broil for about 1 minute until the glaze begins to bubble and looks.
Spread one side with miso mix and sprinkle with sesame seeds. Cook for a few minute until skin is brown. Rinse pat dry then brush with a little veg oil on both sides.
Wash eggplant and cut lengthways in 1cm thick pieces. Roast for 10 15 minutes until the eggplant is soft and the miso caramelised. Sprinkle with salt and leave hour.
Place the eggplant in a baking dish and toss in the oil. Cover a cooking tray with foil and place the eggplant on top. Brush off any salt flakes that remain.
Place cut eggplant pieces into a large colander and sprinkle with salt. Place mirin sake shiaoxing wine sugar sesame oil ginger and miso paste in a small heavy bottomed saucepan on medium. Combine the miso sugar sake mirin and 2 tablespoons of cold water together and mix to a smooth paste.
Eggplant is a good source of vitamin a vitamin c calcium and magnesium. Roast for 20 minutes until the eggplant is lightly browned. Brush miso dengaku mix on top of each eggplant until all the surface is coated.
