Place eggplant 1 inch apart on baking sheets coated with cooking spray.

Leaner part skim ricotta is jazzed up with garlic crushed red pepper basil and cheese. Instead of frying the eggplant the slices are dredged in a parmigiano reggiano cheese and whole wheat panko mixture and faux fried by baking them in the oven. Dredge in panko mixture pressing gently to adhere and shaking off excess.
Bake flipping the eggplant and switching the pans between racks halfway until the eggplant is tender and lightly browned about 30 minutes. To make eggplant combine 2 eggs and 1 tablespoon water in a shallow dish. Dip eggplant in egg mixture.
Dip eggplant in egg mixture. Top with half of mozzarella cheese. To bake cover with foil and bake 400f in the center rack 40 minutes.
