Add noodles or pasta about 4 heaping cups and cook uncovered until just tender about 5 minutes.

Once it is all combined stir in the noodles and let them cook 6 8 minutes or until just tender. While the soup simmers mix the cornstarch and water until the cornstarch is completely dissolved. Salt both sides of the chicken thighs and set aside.
Add the noodles and cook till desired. Add the onion mixture and the remaining 1 2 teaspoon kosher salt. Ladle the soup into bowls and garnish with black pepper lemon wedges and fresh herbs as desired.
Clear a space in the middle of the pan and add the garlic. Prep the ingredients for the soup. Return the shredded chicken to the pot and stir in the parsley and lemon juice.
