In a large bowl sift together flour baking powder baking soda salt. Cream 140g softened butter and 140g caster sugar until light and fluffy then slowly add 2 beaten large eggs with a little of the 140g flour. Bake in preheated oven for 60 to 65 minutes until a toothpick inserted into center of the loaf comes out clean.
Fold in the remaining flour 1 tsp baking powder and 2 mashed bananas. Lightly grease the loaf tin and line it with non stick baking parchment. An electric mixer is best for this but of course you can also beat by hand with a wooden spoon.
