Recipe Potato Leek Soup No Cream
Discard bay leaf and blend the soup.
Recipe potato leek soup no cream. Cover and simmer for 20 30 min until potatoes are very soft and fall apart when forked. Add the chopped leek and sautee for 2 3 minutes until it softens then add the carrot and potatoes and give it a good stir. Stir puree into remaining soup.
Wash the leek and chop it as well. An immersion blender is ideal but transferring soup to a regular stand blender will work. Simmer until fork tender about 10 mins.
In a blender puree 1 cup of the soup. Make sure they don t turn brown. In a large stock pot sauté the onion celery leeks and garlic until soft and fragrant.
Peel wash and chop the potatoes and carrots. Turn down the heat to a simmer put the lid on the saucepan and simmer for 20 25 minutes. In a large heavy saucepan cook the leeks in the butter over medium heat until softened but not brown.
Bring temperature to a low boil and then reduce to simmer for 20 25 minutes until potatoes are soft. Add the water the broth and the potatoes. Saute leeks and onion in olive oil for 10 min on med low heat until soft and fragrant.
Add broth potatoes salt pepper thyme marjoram and bay leaf. Puree soup in batches until smooth. Heat up the oil add the butter and allow it to melt.
