Recipe For Delicata Squash With Goat Cheese

Recipe for delicata squash with goat cheese. Add in a splash of pasta water if needed to coat the noodles. Cook for 15 minutes over medium heat stirring once or twice until the mushrooms have shrunk and the onions are translucent. Divide into bowls and top each bowl with an egg and the delicata squash.
To serve arrange the roasted squash on a platter or in a large bowl. To the pan with the rendered fat add mushrooms onion garlic oregano 1 teaspoon kosher salt 1 2 teaspoon freshly ground pepper and chopped fennel seeds. Remove from the heat and set aside.
Top with the goat cheese cilantro and pomegranate arils. Trim both ends of each squash and cut in half length wise. Drain pasta and return to pot.
Use a wooden spoon or tongs to toss pasta until goat cheese is melted and the sauce coats the pasta evenly adding more pasta water if needed. Simmer for about 10 minutes or until the dressing is reduced to about 1 3 of a cup. Add goat cheese parmesan and 1 cup of the pasta water.
Cook pasta according to package directions. Drain the pasta saving a bit of pasta water and return the pasta to the pot. Scrub the delicata squash to remove any dirt or residue.
Add in the goat cheese mixture and stir to combine.
