Recipe Eggplant In Garlic Sauce
Add garlic ginger spring onion and bell pepper strips and cook until fragrant.
Recipe eggplant in garlic sauce. Sprinkle eggplant with 1 tablespoon cornstarch and mix by hand until eggplant is evenly coated with with a thin layer of cornstarch. Add cooked eggplant and stir sauce before adding to the skillet. In the same pan add some oil chopped ginger and garlic and whole red chillis.
Here are the steps. Add the eggplant and chili oil to the skillet. Add 2 tablespoons oil to a big nonstick skillet and heat over medium high heat until hot.
Pour into the bowl with the eggplant. Add crushed peppercorn star anise cinnamon and cloves to the mix and saute for a min. Let simmer until thickened about 1 2 minutes.
Meanwhile mix sugar cornstarch soy sauce and oyster sauce in a bowl until sugar and cornstarch have dissolved. Saute eggplant strips until golden and soft remove eggplant from skillet and set aside. Toss sliced chinese eggplant in corn starch and roast in hot pan in oil till soft and crisp exterior.
Give the sauce mixture a good whisk and pour into the skillet. Not every chinese recipe call for stir frying over high heat. Cover and simmer until all the water is absorbed.
Heat the canola oil in a skillet over high heat. Stir well to coat eggplant until sauce thickens. Add the vinegar to the eggplant mix well.
