Meanwhile heat the olive oil in a large skillet over medium heat. Take the squash out of the oven and fill each half with the sausage mixture. On a rimmed baking sheet toss squash and onion with oil and arrange in an even layer.
Cook until onions begin to soften. Cook the sausage in the oil until brown breaking the meat into small pieces as it cooks. Transfer sausage to a bowl and keep warm.
Roast until vegetables are just tender 15 to 18 minutes. Slice a small piece off the top and bottom of the squash so it can sit upright then slice the acorn squash in half width wise not through the stem. Roast in the preheated oven until tender 45 to 60 minutes.
Preheat the oven to 400 f and line a large baking sheet with parchment paper. Add the onion to the pan and cook for five minutes stirring occasionally. Microwave covered on high until tender 10 12 minutes.
Season with salt and pepper. Roast for an additional 30 minutes. Add garlic and sausage until sausage is browned on all sides.
