Baked Eggplant Parmesan Recipe Simple
Preheat oven to 375 degrees then coat a large baking sheet and a 9 x 13 baking dish with cooking spray.

Arrange half the eggplant in dish. Step 3 while eggplant is cooking combine spaghetti sauce and pepper flakes in a microwave safe measuring cup. Cover the bottom of a 9x13 inch casserole dish with a layer of spaghetti sauce.
Sprinkle with remaining 2 tablespoons parmesan. Slice the ends off of each eggplant and cut each one crosswise into discs. Bake until sauce is bubbling and cheese is melted 15 to 20 minutes.
Cover with 2 cups sauce then 1 2 cup mozzarella.
