Recipe Vegan Eggplant Parmesan

Cover with foil and bake for 35 minutes. Add onion and a pinch of salt and cook for a minute. 1 tablespoon minced fresh basil or 1 teaspoon dried basil divided.
1 teaspoon garlic powder. Rinse eggplant slices to remove salt and pat with a clean dishcloth or paper towel and set aside. Slice eggplant into thin rounds slightly less than 1 2 inch thick and sprinkle each side liberally with sea salt.
