Bring to a boil. In a small bowl mix cornstarch and water until smooth. Add the cornstarch mixture to the soy milk and whisk thoroughly until it becomes thicken slightly similar to heavy cream.
Add 6 cups of the broth and the kale. Stir in kale and beans then simmer until everything is tender about 5 to 10 minutes more. Transfer to a blender and blend until smooth.
In a small container whisk the cornstarch with 3 4 cups water. Add the onions and potatoes and saute until golden brown 5 8 minutes sprinkling with salt and pepper. Add potatoes kale milk and cream.
Stir well and bring to a boil. Bring to a boil reduce heat to low and simmer for 15 minutes until potatoes are tender. Return to a boil stirring constantly.
Add the kale and simmer for another 10 minutes or until the potatoes are soft and the kale is cooked. Simmer covered 10 15 minutes or until potatoes are tender. Once potatoes are tender remove soup from heat add the cream sauce and remaining parsley.
