Recipe Eggplant Air Fryer
Setup a dredging station.
Recipe eggplant air fryer. Slice into 1 4 rounds. Remove the eggplant from the air fryer and garnish with optional parsley and parmesan before serving. Shake the basket halfway through the cooking time to ensure that it cooks evenly.
Put the eggplant in the air fryer basket. Then setup the breadcrumb mixture the egg mixture the sliced eggplant next to each other and dredge each piece of eggplant in the egg then the breadcrumb mixture pressing the breadcrumbs into the eggplant as you dredge them. All air fryers cook differently.
Preheat an air fryer to 370 degrees f 185 degrees c. Place in your air fryer basket set to 380 degrees and cook for 15 20 minutes tossing once at the halfway point. Transfer the eggplant to your air fryer and air fry for about 8 10 minutes depending on the size of your eggplant.
Cook for 5 minutes flip and then cook another 5 minutes until golden on both sides. Preheat air fryer to 380 degrees for 5 minutes. Cook until nicely golden and fork tender then serve warm with a sprinkle of fresh parsley or chives and sriracha mayo for dipping.
Combine all ingredients and toss until eggplant pieces are coated with olive oil and spices. Air fry the eggplant at 375f for 20 minutes shaking the basket halfway through. Put into preheated air fryer basket so they re not overlapping spray lightly with olive oil spray.
Preheat the air fryer to 390 degrees this usually takes 5 minutes. While the air fryer is preheating you can dredge the eggplant. Cook at 390 degrees for 5 minutes.
