Acorn Squash Kale Sausage Recipe
Season to taste with salt and pepper and sprinkle in fresh thyme.
Acorn squash kale sausage recipe. Add kale and toss. Add to baking sheet and roast until sausages are cooked through squash is tender and kale is slightly crisp about 5 min. Halve acorn squash scooping out seeds.
Divide kale sausage filling among squash. Place squash flesh side down on a baking sheet lined with aluminum foil. Broil until panko is golden 2 minutes.
Place flesh side down on baking sheet. Bake for about 40 minutes or until flesh is fork tender. Broil until panko is golden 2 minutes.
In a bowl combine walnuts parmesan and panko. Remove squash from the oven and carefully scoop out of the flesh. Add kale and toss.
Incorporate into sausage and kale. Turn down heat to medium low and add stock stirring up sausage bits from the bottom of the pan. Bake until golden and tender 40 minutes.
Roast for 25 min flipping squash after 20 min. In a large bowl massage kale with remaining 1 tbsp oil and pinch of salt until softened. Add onion and cook 2 3 minutes.
