Recipe Apple Meringue Pie
Pierce the bottom all over with a fork then refrigerate 15 minutes.
Recipe apple meringue pie. Line a 9 inch pie plate with the dough. In a large bowl toss apples with lemon juice. Spoon apple mix into the flan case top with the meringue creating peaks then cook in the oven for 15 20 minutes until golden.
In separate bowl cream sugar and butter then blend in lemon juice and beaten egg yolks and pour over apple. Add the yolks to the cooled cooked apples and stir to mix well. Gently spread the meringue over the apple filling extending it over the pie crust edges to seal in the filing.
Pour over apples and toss to coat. For the meringue whisk the egg whites until stiff and gradually add the remaining caster sugar. Bake in preheated oven for 35 minutes or until toothpick comes out clean.
Cool for a while before serving. Place 1 4 of apples onto the buttered baking pan sprinkle some raisins and walnuts on top then add 1 4 of the flour mixture. Put apple mixture on base and pile meringue on top.
All you need are apples eggs and sugar all ingredients you may have already or are easy to source at a local shop. Add the egg whites of 2 eggs and beat them until they form stiff peaks. Add the flour and the egg yolks mix well with a wooden spoon.
Beat egg whites until soft peaks are formed then gradually add sugar and vanilla and beat until meringue is stiff. Return the pie to the oven and bake for about 20 to 30 minutes until the meringue is golden. Divide the egg whites over the pie after 15 minutes and finish with a handful of almond shavings.
