Recipe Grilled Eggplant Parmesan

Recipe grilled eggplant parmesan. Step 1 prepare a grill or grill pan for cooking over medium heat. Here the sliced eggplant dipped in egg whites then dredged in breadcrumbs and parmesan cheese. Cover grill and cook until cheese is melted and eggplant is tender 3 4 minutes.
Pulse until blended but still chunky. Then spray the slices with olive oil so that they stay together on the grill. Stir together the olive oil and garlic in a small bowl.
Step 2 slice the eggplant into eight 1 2 inch thick rounds. Grill cut side down until charred in spots 4 to 5 minutes. Add the garlic and red pepper flakes and cook stirring until fragrant about 2 minutes.
Place the baking sheet back on the grill over direct heat to warm up and melt the parmesan. Remove the eggplant to a baking sheet and grate parmesan all over the top. Brush eggplant and tomato slices with olive oil and season lightly with salt.
When grill is hot add eggplant slices and cook covered until eggplant is well browned on one side 3 4 minutes. Spread 1 2 cup of the tomato sauce in a nonreactive 11 by 8 inch baking dish. This baked eggplant parmesan is a healthier way of making one of the most delicious italian dishes.
Brush cut sides of tomatoes and shallot with 1 tablespoon oil. Add vinegar garlic crushed chili flakes 1 2 teaspoon salt and remaining 2 tablespoons olive oil. The eggplant is grilled rather than breaded layered with a delicious italian tomato sauce mozzarella and parmesan cheese.
