Recipe For Meatloaf Cupcakes With Mashed Potato Frosting
Place meatloaf mixture into muffin tins filling them to the top making sure they are flat at the top.
Recipe for meatloaf cupcakes with mashed potato frosting. Add remaining meatloaf ingredients and use your hands to mix and combine well. Frost each meatloaf cupcake with a heaping scoop of mashed potatoes. Mound potatoes on top of mini meatloaves after they come out of the oven.
Bake uncovered for 18 20 minutes or until cooked through. Place the pan in the oven and bake for 20 to 25 minutes or until the internal temperature of the meatloaf reaches 160 degrees. Pipe the frosting onto the meatloaf cupcakes and serve.
