Recipe for acorn squash with sausage stuffing. While squash is roasting in a large fry pan over medium heat heat oil and add onion celery salt pepper and rosemary. In a small bowl whisk together egg and milk. Bake for 40 minutes to an hour depending on size of your squash until tender and you can pierce with a fork but still holding it s shape.
While the squash is baking begin sautéing the sausage for about 5 minutes drain and pat dry with a paper towel to remove as much grease as possible but don t discard grease in the pan. Sprinkle salt and pepper over acorn squash to taste. Preheat the oven to 400 f and line a large sheet pan with parchment paper.
Finally mix in bread crumbs and parmesan cheese just until incorporated. Stand the acorn squash up on one of the flat ends. Add to sausage mixture and toss until moistened.
Stir in spinach cranberries and bread crumbs. Microwave covered until a thermometer inserted in stuffing reads 165 2 3 minutes. Slice a small piece off the top and bottom of the squash so each half will sit flat then slice the squash in half across the middle not through the stem and scoop out the seeds.
Add apple until slightly softened. Add garlic and sausage until sausage is browned on all sides. Place the acorn squash on a cutting board.
Beat egg in a large bowl. Cook until onions begin to soften. Fill squash halves with sausage filling.
