Apple Pie Recipe Using Zucchini
Peeled sliced zucchini are sauteed in lemon juice until just tender and then it s combined with all the usual apple pie fixings.
Apple pie recipe using zucchini. Brush top crust lightly with water and sprinkle crust with sugar. Put sliced zucchini and lemon water into a deep skillet with a tight fitting lid and simmer stirring often until zucchini is limp opaque. Remove seeds and cut crosswise.
Reduce the heat and cook stirring occasionally until the zucchini starts to soften about 5 minutes. Leave over sink to continue to drain. Sugar cinnamon brown sugar nutmeg and flour.
In a bowl toss zucchini with sugars cinnamon nutmeg cardamom cream of tartar cornstarch or flour and salt until well coated. Combine the zucchini and lemon juice in a medium saucepan. The filling is piled into a pastry crust dotted with butter and topped with a second crust.
Bring to a boil. Serve warm with vanilla ice cream. Place lightly floured pastry in a 9 inch pan.
Peel the zucchini and cut into quarters lengthwise. Cook chopped zucchini lemon juice and salt until tender crisp in a frying pan. Bake for 30 minutes or until the topping is golden brown and the filling is bubbling thickly at the edges.
Remove pie from the oven and cool on a wire rack for approximately 1 hour to set. Dot with butter drizzle with vinegar. Pour the topping mixture evenly over the top of the filling.
