Acorn Squash Leek Recipe
Using an immersion blender or a regular blender blend soup until smooth.
Acorn squash leek recipe. Place in oven for 25 30 minutes. When squash is cool enough to handle scoop out seeds and discard. The squash is ready when a fork can easily pierce through the flesh.
Stir well and simmer about 5 minutes. As soon as they begin to sizzle turn the heat right down and cover the pan. Scoop out the flesh from the skin and add to the pot with leeks.
Add about 2 3 of the chicken stock to the pot. Preheat the oven to 350. Heat the butter in a saucepan over a medium heat and add the leeks.
Brush the cut sides of the squash with olive oil and season the cavities with salt and pepper. Place squash halves on it with insides facing up.
